The Journey from Bar to Bottle

This project began fueled by a passion for orgeat, a truly mystical ingredient with a rich history and an alluring flavor combination. It’s an ingredient that effortlessly inspires obsession. Let's get into it..

First off, it has an extensive history that stretches back much further than its appearance in the 1944 Mai Tai. In fact, it was a key ingredient in the first evolved cocktail ever on record in 1867.

Secondly, and equally vital, is the fact that this magical combination includes almonds. Almonds are one of the most versatile food pairing in the world, and they work just the same when it comes to creating fantastic drinks… 

Ultimately , orgeat is a bartender's secret weapon. It's the hidden gem that transforms a good cocktail into an unforgettable masterpiece. Its ability to add depth, complexity, and a hint of mystery makes it an indispensable asset behind the bar.

For all of these reasons, we didn’t take the task lightly when sourcing a brand of orgeat syrup to use for our craft cocktail program.

The Road of Challenges

However, during the sourcing process, we found the available options fell short in the departments of quality ingredients, shelf-life, consistency, and versatility. In fact, no two store-bought orgeat syrups contained the same ingredients at all. Unable to find one we could be confident using in cocktails, we started making it ourselves. Despite how incredibly delicious homemade orgeat is, it was both expensive and time-consuming. So, the sticky situation was, how do we create a consistent orgeat without compromising ingredients?

Where Tradition Meets Innovation

Then our light-bulb moment happened – Liqueurs! Liqueurs are the condiments of the cocktail, the spice rack to all creations - and many of them got their start as syrups or tonics. Liqueurs don’t face the myriad of problems that syrups do, like separating or limited shelf life, and there’s no need to refrigerate them. By using distillers’ old-world tradition of taking flavor from syrup to spirit, we unlocked the key to accomplishing our goals:

Create an orgeat that uses natural ingredients, putting integrity, good intentions, and love at the forefront.

Standardize this flavor profile, so that your favorite cocktails can be replicated around the world.

Most of all, to give orgeat a well-deserved home on the back of the bar and make this iconic ingredient accessible to everyone.

An Ode to Almonds

Our liqueur was modeled after our favorite house-made orgeat recipe, which incorporated roasted California almonds. California almonds are the almonds that we know and love, the ones in our everyday diet. They are also the most versatile nut in the world, and boast a much different flavor profile to other amaretto almond liqueurs that you may have tried. We’ve partnered up with family-owned farms that are compliant with CASP. These farms utilize drip irrigation technology, low-emission vehicles, whole orchard recycling, and 100% bi-product allocation.
